I was recently asked to propose some strategies for settling conflicts around mealtime in the house. In part 1 of this series I offered some ideas on how to make comfort food healthy. This is a challenge in my own household. This second struggle is one I think many people, as well as households, face. Now that we are vegan and eating a plant based diet, finding that balance between fast and preparing fresh and healthy meals is an ongoing challenge. So perhaps I will do a part 3 to this series, but for today I want to talk about the power of power cooking with a focus on chicken. Sometimes prepping ahead can help us have the satisfaction of serving up meals that look like we spent significant time cooking and actually come together in no time.

The key to easier mealtimes is to do some simple prep at the start of the week, like batch cooking your protein. Pressure cooking and sous vide are both great hands-off options. If you’re shorter on time, go with pressure cooking. If you have more time, give sous vide a go.
